White teas are slightly fermented, paler in color, and high in polyphenols. The production of most varieties of white teas consists of only two steps: Steaming and drying. Some white teas are slightly fermented. The absence of withering, rolling, and oxidation leaves the appearance of the leaves essentially unaltered. When infused, white tea has a pale yellow cup and a delicate, fresh flavor.
Mate is the traditional beverage in many parts of Latin America. Mate is rapidly gaining popularity as a weight reducer and as a natural caffeine free stimulant.

Japanese Matcha
Matcha is best known for its use in the Japanese tea ceremony. This top-quality matcha is produced by steaming, drying, and grinding top-grade green tea into a fine powder. It is traditionally prepared in a matcha bowl by adding hot (not boiling) water to the powder and rapidly beating with a matcha whisk until a thin layer of foam appears. The result is a cloudy green tea with a pungent, sweet-vegetable flavor. 1 oz. makes 12-15 cups, the same as 2 oz. of most teas. |
